PLANT AND METHOD FOR PRODUCING PLANTS IN AEROPONICS / HYDROPONIA FIELD OF THE INVENTION The invention relates to an installation and a method for producing plants in aeroponics or hydroponics, in particular for the purpose of extracting valuable substances such as active substances, in particular for pharmaceutical or cosmetic applications, without loss. plant viability. PRIOR ART There has already been described, in document WO 01/33942, a process for the production of metabolites according to which plants are cultivated above-ground and the substances of interest are obtained by extraction operations which do not bring the plant into contact. peril. Thus, an attractive productivity is obtained, compared with methods according to which the whole plant or only parts are used, leading to its destruction, such as maceration or distillation. According to one of the extraction methods described in i5 this document, we proceed by cycle by growing the plant which develops both its aerial part and its root part, then we perform a step of permeabilization of the roots. Then, a metabolite recovery step is carried out using a liquid brought into contact with the roots by percolation or by immersion. Document JP-H07-99847A shows an above-ground culture installation in which the plants are in pots carried by trays and which are moved horizontally from station to station. OBJECTIVES OF THE INVENTION The method described in document WO 01/33942 needs to be implemented on an industrial scale, which is now the subject of the present application. DESCRIPTION OF THE INVENTION With these objectives in view, the invention relates to a plant production plant in aeroponics / hydroponics comprising at least one table, mobile trays on the table intended to support the plants to transfer the plants to different positions of the installation, the roots of the plants being intended to be suspended under the trays, the installation being characterized in that it comprises a soaking station comprising an elevator for descending and mounting at least one tray between a high position and a low position of so as to soak the roots in a soaking tank containing a liquid for a predetermined time in the low position. Plants on the shelf can be handled as a large set in different places depending on the stage of development. Such a system guarantees linear guidance on one side of the plate, by grooved rollers, without constraint on the opposite side, so as to be tolerant of possible parallelism defects and differences in thermal expansion or deformations under stress. According to another constructive arrangement, the table comprises a sealing tarpaulin raised against the rail and fixed by a fixing plate, the tarpaulin projecting upwards in the form of a curved lip towards the other rail, bearing under the trays, on a horizontally extending lower sealing surface. Sealing serves to limit the passage of light under the trays and thus avoid the development of microorganisms by photosynthesis. It is also used to contain the different types of liquid used to feed plants by the roots or for their treatment, in particular when the latter is diffused by mist. This sealing is achieved very simply by an overflow of tarpaulin used to delimit a space under the plates. According to an improvement of the installation, the table includes a cutting station, the cutting station comprising a cutting bar extending longitudinally and being movable transversely to shorten one of the parts of the plants. The inventors have realized that it is possible to reio cost part of the plants in order to extract the substances of interest therefrom without their survival being compromised. This harvest complements the recovery by soaking, to enhance other substances or other concentrations of substance. The harvested parts can then be treated by filtration, decoction, maceration or distillation, depending on the i5 nature of the plants and substances that one wishes to develop. In a variant, the cutting station comprises a cutting bar extending transversely and being movable longitudinally relative to the plate. According to an improvement, the cutter bar extends below the level of the 20 trays to shorten the root part, the cutting station further comprising a collection tray for receiving the cut part of the plants. According to a constructive arrangement, the collection tank is inclined and has a channel in the lower part. The harvest is thus easy to collect, and with simple means. Preferably, the cutter bar is adjustable in height. We can thus adapt the harvest to the variety and stage of development of the plants. According to an improvement, the installation comprises at least one transfer carriage for transporting at least one of the trays from one of the tables to the other, and at the end of each table a transverse guide for determining the position of the cart next to the table. The transverse guide, which can be a rail on the ground, makes it possible to determine the position of the carriage with precision and to maintain this position during the maneuver of the platform. According to a constructive arrangement, the carriage comprises sections of parallel rails, at the same spacing as the rails of the table to extend the running rails of the table and receive at least one of the plates, and latches at the ends of the sections of carriage rail to lock the tray (s) in position. Such a station makes it possible to use the same trays to conduct comparative tests on subdivisions of the tray, by subjecting them to different conditions which can be controlled in particular by the nature of the liquid which feeds the plants, and by the frequency and the duration of watering. The invention also relates to a process for producing plants in aeroponics / hydroponics in which plants are placed on trays with the aerial part of the plant above the tray and the root part below, the trays are placed on tables forming a retention zone for collecting the excess of a liquid diffused towards the plants, the trays are transferred to the tables at different stations of the installation, the method being characterized in that it comprises a step of soaking in which the tray is lowered so as to soak the roots in a soaking tank containing a liquid for a predetermined period, the tray is raised, and the operation is repeated with other trays, then the liquid contained in the tank is collected soaking. According to an improvement, the soaking step is preceded by a stimulation step in which at least the root parts receive a stimulation liquid. The stimulation liquid contains for example salts, surfactants, detergents, solvents, elicitors of fungal or bacterial origin, jasmonic acid derivatives, ethylene generators, chitins, chitosans or their mixtures . The stimulation step can also be carried out by using a nutrient solution deficient in nitrogen, for 2 to 6 weeks before the soaking step. This stimulation step makes it possible to significantly increase the content of the metabolites in the roots and also to promote the flow comprising the metabolites leaving the roots during the soaking step, without losing the viability of the plant so that 'it can be re-cultivated. According to an improvement, the soaking step is preceded by a washing step in which the liquid diffused towards the plants is clear water, according to the possible stimulation step. This limits the intake of i5 elements contained in the nutrient solution or in the possible stimulation solution during the soaking step. In addition, the soaking step is followed by a cutting step in which the aerial part or the root part of the plants is partially cut to harvest the cut part. In addition to extracting the substances during the soaking step, we extract those contained in the cut part. According to an improvement, substances of interest are extracted from the cut part by maceration, decoction or distillation. DETAILED DESCRIPTION An installation for producing plants P in aeroponics / hydroponics is shown diagrammatically in FIG. 1. The installation comprises a table 1 on which plates 2 are provided movable in horizontal translation in a longitudinal direction F1. The plates 2 are intended to support P plants during their growth and to transfer P plants to different positions in the installation. Only a table 1 is shown in the figure, but it should be understood that an installation can understand much more, to increase the production area. The installation is carried out for example in a greenhouse. As shown in Figure 2, the table 1 has side walls along which is fixed an opaque sealing sheet 13 extending from one side to the other, passing over the ground S to form a retention zone R. The table 1 comprises two raised rails 11, 12 parallel to one another in the longitudinal direction F1, supported by the side walls 10. The plates 2 include rollers 21, 22 for rolling on the rails 11, 12. A first of the rails 11 is a square section tube which has a first running surface 110 which is flat and horizontal. The other rail 12 is a tube also of square section, fixed with faces inclined at 45 °, so that it has a second rolling surface 121 in relief, in the form of an inverted vee. Each plate 2 comprises two first cylindrical rollers 21 for rolling on the first surface and at least two second grooved rollers 22 whose section is complementary to the second surface 121, therefore in vee, to achieve linear guidance of the plate 2 on the table 1. The sealing sheet 13 is raised against the rail 11, 12 and fixed by a fixing plate 18. The sealing sheet 13 projects upwards in the form of a lip 131 curved towards the other rail 12, 11, coming resting under the plates 2, on a lower sealing surface 23 extending horizontally. A closed space is thus defined under the trays 2 and between the floor S and the walls 10. The roots PR of plants P are suspended under the trays 2 in this space. To supply the plants P with a liquid, not shown, spray bars 4 are deposited on the ground S on the cover so as to intermittently create a mist, in a manner known in aeroponics. The excess liquid is received on the sealing sheet 13 and recycled. The ramps 4 are supplied by a reservoir 5 and a pump 6 supplying the liquid under pressure. According to the invention, the installation comprises a soaking station 14 comprising an elevator, not shown, for lowering and mounting at least one plate 2 between a high position and a low position so as to soak the roots PR in a soaking tank 140 containing a liquid. The soaking is carried out for a predetermined duration while keeping the elevator and the platform 2 that it supports in the low position. The elevator has two sections of rails aligned with the rails 11, 12 of the table 1 when the elevator is in the high position. Thus, one can transfer a plate 2 between the elevator and the other part of the table 1 by simply rolling the plate 2. The stroke is chosen so that the longest roots PR are out of the dipping tank 140 in the high position . Table 1 further includes a cutting station 15 placed just next to the dipping station. The cutting station comprises a cutting bar 151 extending longitudinally in the direction F1 and movable transversely, that is to say in a direction F2 perpendicular to the longitudinal direction Fl. The cutting station further comprises a collection bin 150 extending under the entire extent of a tray 2. The collection bin 150 is inclined and has a channel 152 in the lower part. The cutter bar 151 makes it possible to shorten the root part PR of the plants P of a tray 2, so as to receive in the collection tray 150 the cut part of the plants P. The cutter bar 151 could process several trays 2 together. The cutter bar 151 is adjustable in height so as to be able to choose the residual length of the roots PR after cutting. The cutter bar could be placed transversely and cut either with the movement of the plate 2, or by a clean movement. It could also be placed above the level of the trays in order to cut the aerial part PA of the plants P. In this case, the cut part is not collected in the collection tray, but manually on the tray, with a rake, or mechanically, or even with an accessory such as a conveyor belt, to bring the cut parts to i5 table edge 1. The installation further comprises at least one transfer carriage 7 for transporting at least one of the trays 2 from one of the tables 1 to the other. As shown in Figure 3, the carriage 7 is provided with self-orientable rollers 70 allowing it to roll on the ground in different directions. The installation comprises at the end of each table 1 a transverse guide 16 for determining the position of the carriage 7 opposite the table 1. The guide 16 is produced in the form of a rail fixed to the ground. The carriage 7 comprises rail rollers 71 intended to engage on the guide 16. The guide 16 is placed sufficiently high so that when the rail casters 71 engage on the guide 16, the carriage 7 is raised and that the self-orienting rollers 70 are detached from the ground. Thus, the weight of the carriage 7 is transferred to the guide 16, which ensures good guidance of the carriage 7. The rail casters 71 are also high enough not to touch the ground when the carriage 7 rests on the self-orienting casters 70. Furthermore, the carriage 7 comprises sections of parallel rails, not shown, at the same spacing as the rails 11, 12 of the table 1 to extend the rails of the table 1 and to receive at least one of the plates 2, and latches, not shown, at the ends of the sections of rail of the carriage 7 for locking in position the plate or plates 2. The latches are formed for example of a plate mounted to pivot on a longitudinal axis and comprising an arc notch in the shape of the rail. The plate forms an obstacle at the level of the rail segment when it abuts against the rail, but releases the latter by pivoting. The installation comprises a test station 1 ′ intended to receive one of the plates 2, shown in FIG. 4. The station is divided transversely into four compartments 17 by vertical walls 170 fitted under the plate 2, each compartment 17 comprising an independent liquid circuit for supplying the plants P placed above said compartment 17 independently of the other compartments 17. The test station 1 ′ also includes rails 11, 12 for receiving the tray 2 and a shutter, not shown , which, in a first position, allows the i5 PR roots to pass into the compartments 17 when the plate 2 is put in place, and a second position in which the compartments 17 are closed. In production, the plants P are arranged on the plates 2, by means of supports, not shown, with the aerial part PA above the plate 2 and the root part PR below. The trays 2 are available on the tables, the installation being able to comprise several tables arranged side by side. The P plants are supplied with a nutritive solution which is adapted to the cultivated P plants and to their stage of development. The nutrient solution can be dispensed from above the trays 2, by watering, or by creating a mist in the space under the trays 2. From 1 to 14 days before harvest (soaking step), the nutrient solution is supplemented with a stimulation liquid in order to increase the production of substances of interest and to promote the release of these substances by the P plant. When the P plants are ready for harvest, the PR roots are washed with water to remove residues from the nutrient solution (supplemented by the stimulation liquid or deficient in nitrogen). This washing step is carried out for example upstream of the elevator. Then, we proceed to a soaking step in which we move one of the platforms 2 on the elevator by rolling it on the rail sections, if we lower the platform 2 with the elevator so as to soak the roots PR in a soaking tank 140 containing a liquid for a predetermined period, and the tray 2 is raised. The invention is not limited to the embodiment which has been described only by way of example. The movement of the platforms 2 can be motorized and automated, as can the operation of the elevator.
